Three Fruit Crumble

Ingredients

400g ripe plums

250g dried or semi-dried apricots

150ml orange juice

120g Demerara sugar

120g flour (plain or self-raising)

100g flaked almonds

75g cold butter

Three Fruit Crumble

Method

  1. Coarsely chop the dried apricots and put in a bowl.
  2. In a small pan, heat the orange juice and pour it over the apricots, leaving them to soak for an hour or so.
  3. Pre-heat the oven to 180C (160C fan assisted, 350F).
  4. Stone and quarter the plums and put them into an oven proof dish, together with the apricots and juice, and sprinkle with about half the sugar.
  5. To make the topping, place the flour, almonds and remaining sugar in a bowl. Cut the butter into it and rub it in with your fingers until the mix resembles coarse breadcrumbs (the almonds will break up a little).
  6. Sprinkle the crumble mix over the fruit and press down gently.
  7. Bake for 30 minutes, or until the topping is golden brown. Serve with custard, cream or ice cream.
