Simple Pizza Base Recipe


400g Tipo ‘00’ flour or good bread flour

1 sachet fast action dried yeast (7g)

1 tsp (5g) salt

1 tsp (5g) caster sugar

2 tbsp (30ml) olive oil

225ml (approx.) warm water

Simple Pizza Base Recipe


  1. Pre-heat the oven to 240C (225C fan assisted, gas mark 9), unless you want to give the dough time to rise (see below). Put a large baking tray into the oven to get very hot.
  2. Tip the flour into a large mixing bowl with the yeast, salt and sugar and mix well.
  3. Make a well in the middle and pour in the oil and enough warm water (about 225ml) to bring the mix together as a dough.
  4. Turn out onto a floured work surface and knead with your hands until smooth and springy. Divide the dough into two equal balls.
  5. Roll out one ball to a circle about 25cm across, then stretch and press the dough out with your fingers from the centre outwards until the outside crust is thicker than the centre and the pizza is about 30cm across.
  6. Add the toppings and, if you like a thin and crispy base, put the pizza into the oven and bake for 10-15 minutes until cooked through and the edges are dark brown. For a deeper base, put the topped pizza in a warm place for an hour or so to ‘prove’ and rise a little before baking, preheating your oven as necessary.
