As the colours of the Jane Asher Rainbow Cake Mix are so pretty and so dramatic, I thought I'd try using it for cupcakes and - to make the most of the stunning colours and to vary things a bit - give each colour a flavour to match.
You can of course top these with melted chocolate or a simple chocolate icing, but to create the lovely shiny look it’s best to use fondant icing sugar (you can find it in supermarkets in the sugar section)
A rich and tasty tea-time treat, using my wonderful Chocolate Fudge Cake mix, a hint of orange and the juiciness of sultanas. Ignore the directions on the cake mix pack up until the icing.

The addition of a tiny drop of vinegar to the ingredients will ensure that your meringues don’t ooze or refuse to cook properly – it’s a chef’s trick I learnt years ago and now my meringues always come out perfectly. You can’t taste it at all once they’re cooked
Combining carrot cake with mixed fruit makes for a delicious treat, and very easy to make. Ignore the ingredients and directions 1-4 on the cake mix, and make and bake as shown here.
