Quick No Yeast Bread

Ingredients

500g plain flour

2 tsp baking powder

1 tsp salt

300-325ml milk

Quick No Yeast Bread

Method

  1. Pre-heat the oven to 210C/190°C Fan/gas mark 6. Put a baking tray into the oven to get hot.
  2. In a large bowl mix the flour, baking powder and salt together until well mixed. Make a well in the middle and add 300ml of the milk.
  3. Stir with a wooden spoon until the dough begins to come together, adding a little more milk as necessary, then turn out onto the lightly floured work surface and knead briefly together until fairly smooth (it won’t look as neat and smooth as a yeast dough, but the rugged look is part of its charm).
  4. Press the dough into a flat round disc shape about 3 cm thick, making sure it is evenly thick all the way across or it won’t be cooked in the middle – if anything, make a slight dip in the centre.
  5. Score a star shape deeply in the top.
  6. Place on the hot baking tray and bake for 35-40 minutes, until a light brown colour and the loaf sound hollow when you tap it on the bottom.
