Easy Chocolate Cookies

Ingredients (makes 9 large cookies)

125g softened butter (I like to use salted but it’s up to you if you prefer unsalted)

175g light brown soft sugar (or caster sugar is just as good)

1 large egg

50g Jane Asher cocoa powder

175g self-raising flour

Easy Chocolate Cookies


  1. Pre-heat the oven to 190C/170C fan assisted, gas mark 5. Line a large baking sheet with baking parchment.
  2. Beat together the butter and sugar until light and fluffy, then add the egg as you keep beating (if you’re making this by hand then add the beaten egg little by little).
  3. Sift the cocoa and flour into the mix and beat again until well blended.
  4. Place large spoonfuls (about 2 tbsps) of the mix onto the baking sheet, spacing them out evenly.
  5. Bake for 12-15 mins until spread out and beginning to harden around the edges. Allow to cool for a couple of minutes on the paper, then transfer to a rack to cool completely – or eat them warm.
  6. You can chill the mix once made, roll it into balls and freeze them. They will keep for a month or so and can be cooked from frozen, adding 3 or 4 minutes to the cooking time.
