Chocolate, Orange and Sultana Cake

Ingredients

1 Jane Asher Chocolate Fudge Cake Mix

250g Jane Asher sultanas

2 medium oranges

3 medium eggs

100ml vegetable oil

100g softened butter for the icing

Chocolate, Orange and Sultana Cake

Method

  1. Finely grate the orange zest, putting half into a mixing bowl , reserving the other half for the icing.
  2. Juice the oranges and pour into a small saucepan. Add the sultanas, keeping back a small handful for decorating.
  3. Bring the pan to the boil and stir. Remove from the heat and allow to cool completely.
  4. Pre-heat the oven 180C/160Cfan/gas mark 4. Lightly grease two 18-20cm cake tins and line the bottoms with non-stick baking paper.
  5. Add the cooled sultanas and any remaining juice to the zest in the mixing bowl. Add the Chocolate Fudge Cake Mix, oil and eggs, then mix gently with a mixer or by hand until well blended.
  6. Tip evenly into the cake tins and bake in the centre of the oven for 30-35 mins, until well risen and firm and when a knife is inserted, the centres comes out clean.
  7. Leave for a couple of minutes in the tins, then turn out onto a rack, peeling off the paper, and leave to cool completely before icing.
  8. To make the icing: follow the directions on the cake mix pack, adding the reserved zest. Ice the cake as instructed, then decorate with the reserved sultanas.
