As not the tidiest person in the world, I keep two of these in the kitchen drawer. If I go to grab one and can’t find it there really isn’t anything else that does the job, so giving myself twice the chance of it being in the right place is a good idea for sure. I use it for brushing pastry with egg wash (egg yolk whisked with a few drops of water); brushing semi-set glaze over sweet and savoury dishes; brushing melted butter in sweet and savoury recipes; colouring raw pastry before cooking (just try it - you can get really pretty effects) and all kinds of other things.
