An essential for all baking, sweet or savoury, as it avoids steam gathering underneath once the cake or pie is cooked, thus avoiding the notorious ‘soggy bottom’. Allow the cooked item to cool for a couple of minutes in the baking tin first, then carefully turn out and place right side up on the tray to cool completely before icing.
