Here’s the second of my promised bread ideas to make at home – especially helpful for keeping the children entertained. This one is ultra-fast and isn’t even baked: just gently cooked in a frying pan. More ideas to come so do keep checking back.

Olive Oil Flatbreads

These are extremely easy to make and can be mixed and cooked within about 20 minutes. A very useful substitute for bread rolls or crackers and fun to make with the children.

Makes 8 small flatbreads.


  • 250g self-raising flour
  • 4 tbsps (60ml) olive oil (doesn’t need to be extra virgin)
  • 1tsp salt (or more, to taste)
  • 150ml warm water
  • 1 tsp rosemary or other herbs as desired


Put the flour into a large bowl and mix in the rosemary and salt. Make a well in the middle; pour in the water and oil and mix with a wooden spoon until it comes together.

Then knead lightly with floured hands. Cut into 8 equal portions and shape them into little patties about 2-3 cm thick.

Spread a little oil over the base of a non-stick frying pan and put over medium heat for a few minutes. Add the breads and cook for around 5 minutes, before turning them over. Cook for a further 5-8 minutes, turning down the heat a little to prevent burning.

Eat warm from the pan. Delicious brushed with a little extra oil and sprinkled with sea salt, or with caster sugar. Great spread with butter, eaten with cheese or jam and so on.
